Ingredients:
• 1 cup cucumber, thinly sliced or julienned
• 1 cup carrot, grated or julienned
• 1/2 cup radish microgreens
• 1 tbsp roasted sesame seeds (optional, for crunch)
For the Dressing:
• 2 tbsp olive oil
• 1 tbsp lemon juice
• 1 tsp honey or maple syrup
• 1/2 tsp grated ginger (optional, for a zing)
• Salt and pepper, to taste
Instructions:
◦ Slice or julienne the cucumber and carrot into thin, even strips.
◦ In a small bowl, whisk together olive oil, lemon juice, honey, grated ginger (if using), salt, and pepper.
◦ In a large bowl, combine cucumber and carrot.
◦ Drizzle the dressing over the vegetables and toss gently.
◦ Gently fold in the radish microgreens just before serving to keep them fresh and crisp.
◦ Transfer to a serving plate, sprinkle roasted sesame seeds on top, and garnish with a few extra radish microgreens.
